Each cheese is different from another and our master cheesemakers follow its evolution step by step.

The simplicity of raw materials

The soul of our products is made of three simple ingredients: milk, rennet and salt. Three components which can take endless shapes, flavours, fragrances and textures. It all depends on the hand of the cheesemaker.

Ancient peasants’ tradition

Our master cheesemakers watch the different steps of the curdling of milk day after day: their watchful eye and skillful touch determine at every moment which decision to make, in order for the transformation to advance according to the traditional recipe.

The care of each step of the processing

Each phase of the processing is designed to perfection: from milk collecting, to the processing, seasoning and packaging, to preserve and present our cheeses at best. Always with passion and care, our most important values.
