C'era una Volta is the handcrafted product of a fine and patient evolution. It is a large sheep's milk cheese that transforms over time and its long maturation requires all the care and attention of the master affineur who follows its maturation process step by step.
Every stage of processing is taken care of by expert hands: from salting, which is done exclusively by hand, to oiling, which allows the cheese to ripen deeply and evenly. Its ancient appearance and old-fashioned flavour make it a perfect cheese for a sociable dinner party.
