After a skilful maturation process, the cheese is left to rest in special containers, surrounded by fragrant walnut leaves and hermetically sealed. This procedure allows the pecorino cheese to express its properties fully, allowing it to take on unique, characteristic aromas and a moist, chalky, compact texture.
