A world-renowned PDO sheep's milk cheese with an unmistakable flavor.

Il Formaggio di Fossa di Sogliano PDO is one of our best-loved products. The tradition of ripening the cheeses in pits dates back to the Middle Ages, when farmers rented out to cheese makers the tufa pits, originally used for storing grain. Here, the special conditions of temperature and humidity create the ideal environment for the numerous chemical, physical and microbiological transformations that make Fossa di Sogliano PDO cheese an unmistakable product.
We age our best sheep's milk cheeses in the pits and after three months the cheeses return to the light reshaped, with irregular contours and a typically oily surface. They acquire a characteristic and harmonious flavour, thanks to which Fossa di Sogliano DOP cheese is famous throughout Italy and sought after worldwide.

Formaggio di Fossa di Sogliano PDO cheese is certified by a Control Body authorised by MIPAAF.

Cheese ripened in the historic pits of Sogliano al Rubicone, made from sheep’s milk.

  • texture: chalky, tending to flaky
  • colour: creamy white
  • aroma: intense and persistent with hints of mould and undergrowth
  • flavour: strong and harmonious, savoury and slightly piquant
