Cacio Fænum is a sheep's milk cheese ripened in hay with a typically rural flavour. The master cheesemakers carefully and passionately follow it through all the stages of maturation before it is laid on a bed of fragrant hay. Here the cheese goes through a slow fermentation process that blends the flavours and transforms the aromas, creating something completely new, refined and peculiar. This ancient ripening technique has been rediscovered to creatively revisit the original farming traditions.
The terracotta barrel and the basket are available for purchase and use to enhance the point of sale.
