Squacquerone di Romagna DOP is a cow's milk cheese with very ancient origins and a symbol of Romagna tradition. Fresh, soft and creamy, it has a sweet, delicate flavour, characterised by a slightly acidic note. For this reason this cheese is particularly suitable for accompanying caramelised figs, jams and vegetables. According to local tradition, it is best paired with piadina romagnola, prosciutto crudo and rucola. Some chefs use it as an ingredient for more refined and unusual recipes, as a filling or in desserts.
