The dairy of Antica Cascina produces excellent quality dairy products every day.


Our milk is accurately selected from the shepherds pasturing their sheep on Romagna’s hills and undergoes strict laboratory tests, after which it is processed according to the various production needs.


The passion and fantasy of our cheese-makers pushes us to always look for new dairy products, either fresh or matured, made mainly from ewe’s or goat’s milk.

Ewe’s milk cheese is our top-ranking product, made according to the production specifications of the renowned “Formaggio di Fossa di Sogliano P.D.O.” (cheese cured in caves).

We carefully follow every stage of cheese production, from milking, processing, and storage in the caves, up to packaging granting the quality and the respect of the hygiene regulations.
